Tip 5: How to cook salads with chicken in 2018

You will need
  • For mashed potatoes without soaking:
  • - 400 g of dry yellow split peas;
  • - 30 ml of vegetable oil;
  • - salt;
  • For mashed potatoes in Greek:
  • - 250 g dry yellow peas;
  • - 1 onion;
  • - half a lemon;
  • - 1 sprig of oregano;
  • - 90 ml of olive oil;
  • - salt;
  • For mashed frozen peas:
  • - 300 g of frozen green peas;
  • - 50 ml of 20% cream;
  • - 20 g butter;
  • - 1/2 tsp ground black pepper and salt.
Instruction
Mashed peas without soaking
Loop the dry peas, discarding the darkened ones, and rinse thoroughly under running water. Put them in a large pot, pour 6.5 tbsp. cold water and put on a strong fire. Pour in the vegetable oil, add 1/2 tsp. salt, stir and bring to a boil.
Reduce the temperature to an average and cook the peas under a lid for 1.5 hours. As often as possible, stir it with a spatula or spoon so that it does not burn, and be sure to remove the white foam formed with a skimmer.
Remove the lid and set aside, reduce the heat to minimum and simmer the pea puree for half an hour, then add salt to taste, set aside and allow another 20-30 minutes to thicken to the correct consistency. Serve it as a side dish or as an independent dish.
Greek pea puree
Soak dry beans in cold water for several hours, and preferably overnight. It is desirable during this time a couple of times to change the water. Fold the peas in a colander and rinse. Put it in the pan. Peel the onion and chop with a knife, finely chop the oregano.
Pour onions and herbs in a saucepan, pour olive oil and water so that it covers the products on two fingers. Boil everything over high heat and reduce to minimum. Cover with a lid and cook the peas 40 minutes before cooking. Salt it and boil for another 20-30 minutes.
Cool the pea mass a little, rub it into a puree using an immersion blender and heat it on the stove. Mix lemon juice into it, arrange in plates and serve with unleavened cakes.
Frozen Peas Puree
Fill a small saucepan 3-4 Art. water and bring to a boil. Put the frozen peas in there and boil it for 3 minutes, then fold it into a colander and put in a bowl.Crush it in a mash with a potato press or a blender, mix with cream, butter, salt and pepper.

Peas are a bean product, which means that dishes from it can cause gas accumulation and, as a result, bloating. To avoid this, drink mint tea or infusion 20 minutes after eating.
Helpful advice
If you have a pressure cooker, then it will take no more than 15 minutes to cook the pea puree, provided it is soaked for at least an hour.
Cook pea puree in a thick-walled pot, preferably of cast iron, it retains heat better, and the dish will taste like a Russian stove.
