Secrets of cooking real pepperoni pizza
Those who like to pee often in a pizzeria probably know the name of "pepperoni", because this is one of the most popular and delicious pizzas. But it turns out that this dish carries such a name everywhere except Italy, which, by the way, is considered its homeland. Italians call this delicacy Pizza Diabola, which means “devilish”. This name is not accidental, because its spicy taste is familiar to every gourmet.
The secret of this piquancy lies in the use of a special sort of salami, which is prepared with the addition of red pepper. Now you can buy such a sausage in almost any large supermarket, like mozzarella cheese, which is another essential ingredient.
The most important and at the same time difficult for pizza is dough. After all, we have to make not the basis for a pie, but a classic thin flat cake. How to prepare an original basis? For this will be needed:
- flour - 200-300 g;
- yeast - 10 g;
- olive oil;
- salt, water.
Add dry yeast, salt, olive oil to the flour and gradually add water, kneading. When the mass becomes elastic, leave for half an hour.
In the meantime, we are preparing products for the filling, the traditional recipe includes:
- ground tomatoes or pasta - 30-40 g;
- pepperoni sausage (ordinary salami can be used at home) - 10-120 g;
- Mozzarella (Gouda, Edam) - 100 g;
- spices to taste.
Cut the sausage into thin slices, cheese three on a fine grater.
Roll up the dough in the form of a circle, remember that it should be thin, the ideal thickness - 2-3 mm.
Lubricate the preparation with chopped tomatoes or pasta, add spices (ground black pepper, oregano), sprinkle with grated parmesan cheese, put the sausage circles on top. We put on it another layer of cheese.
Heat the oven to 300 degrees and bake for 10 minutes.
Shredded tomatoes are suitable for smearing the basics, but if you want to make a delicious pizza according to the original recipe, then it is better to make an Italian sauce. For it will be needed:
- tomatoes in their own juice - 100 g;
- olive oil - 1 tbsp;
- Basil - 3-4 leaflets;
- oregano, salt to taste.
All ingredients must be mixed to a homogeneous mass in a blender, put on a small fire, let it sit for 10 minutes and allow to cool.
