Rich in phosphorus, calcium, amino acids, as well as other valuable trace elements and vitamins, the fish is a must and a regular guest of our lunches and dinners. Fishcakes can be an excellent alternative to meatballs during Lent, as well as for those who adhere to the principles of diet and low-calorie food.
The protein that is found in fish meat is absorbed by our body much easier than meat, and fish oil supplies it with the necessary standard of cholesterol.
To cook delicious fish cakes, you need to take care of the preparation of the fillet, which is the main component of this dish. Of course, it is good if there is an amateur fisherman at home who constantly supplies your family with fresh favorite fish, otherwise you will have to go to the market or shop for it.
For airy and juicy meatballs, cod fillet, perch, pollock, catfish, pike, salmon, that is, various types of meaty fish are best suited. The most delicious burgers, naturally, come from fresh fish, so when choosing, pay attention to the gills, they should be bright red in color, and on the fillet - elastic and dense. If the fish has a lethargic appearance, dark gills and dull eyes, then such an instance is clearly not the first freshness and will not fit for delicious cutlets.
Little secrets and cooking tips
The main ingredients for making homemade fish patties are fillet, milk or water, eggs, white bread and spices. Naturally, the composition may vary somewhat depending on the specific recipe and your personal taste preferences: someone loves spices, and someone costs only salt and pepper.
Spices are mainly added by those who do not really like the characteristic fish smell, thus shading it and hiding it from curious spouts. This is especially true for young children who do not always agree to eat fish, no matter how useful it is.
The juiciness and airiness of fish cutlets, in many respects, depend on the added ingredients, as well as on the correct observance of the necessary proportions.
Some hostesses for juiciness and softness add fat, butter or mayonnaise, usually the calculation is as follows: for 1 kg of minced meat there is 50 g of fat or 2 tablespoons of oil. The amount of bread added is also strongly reflected in the consistency of the result; if you overdo it, the cutlets turn out to be too dense and not juicy, and if you add excess milk or water, they will “blur” over the pan or other surface.
Alternatively, to give juiciness, you can add chopped onion in the stuffing, this is especially true if you use low-fat fish. Usually minced fish is prepared in three most popular ways: using a meat grinder (in this case, you must skip the fillet twice through a large grill to save juice), using a blender or using a regular knife to get minced meat.
Before the fish fillet is processed, it must be thoroughly cleaned of all large bones, the smallest ones will be shuffled during the process of cooking minced meat.
Cod Fish Cake Recipe
For the preparation we need:
- cod fillet - 700 g;
- eggs - 2 pcs .;
- Parmesan cheese - 100 g;
- greenery for decoration;
- salt, pepper, garlic and herbs to taste.
Cut the fillet into two parts, remove all visible bones, and then send the cod to grind in the bowl of the blender or grind it with a meat grinder (skip 2 times). When the fillet is transformed into a homogeneous mass, we add eggs, 2 cloves of chopped garlic, salt, continue to beat until a sufficiently dense homogeneous mass is formed.
Then we prepare the prepared mass in a clean bowl, add the grated Parmesan cheese, black pepper and again mix everything thoroughly. Now we form the meatballs: take the stuffing with wet hands so that it does not stick and does not fall apart. Bitties should turn out to be round, approximately 2-2.5 centimeters thick.
Frying pan preheat in advance, watered with vegetable oil and send it to roast our bits on both sides for 8-10 minutes. Ready cutlets should be lightly browned, while serving, decorate them with greens.
Recipe for hake steamed meatballs
The recipe for such fish cakes involves the use of any kind of fish, for example, we use hake fillets.Steamed cutlets are an excellent therapeutic and dietary dish, which is especially useful for people with diseases of the gastrointestinal tract and overweight.
The easiest way to cook such a dish with the use of a multicooker, but if you do not have such a device, you can use an ordinary saucepan and a colander with warm water. So, let's consider in more detail.
- Hake fillets - 800 g;
- eggs - 2 pcs .;
- lard - 100 g;
- onion - 2 pieces;
- solid fused curds - 2 pcs .;
- semolina - 2 tbsp. spoons;
- a couple of slices of hard bread;
- salt, spices, sunflower oil.
Fish fillets are cleared of visible bones, ground in any convenient way, during which we obtain a dense homogeneous mass. Peel the onion, divide into 4 parts. Stale bread must be pre-soaked in water for literally 1-2 minutes, it should be softened, but not limp in porridge, squeeze out excess water and grind bread with a fork. All three ingredients (fish, onion and bread) are again passed through a meat grinder 2 times or ground in a blender.
We grind fat and add eggs, semolina and grated cheese to the mixture, mix everything and leave to stand (the semolina should swell) for 20 minutes.
After the time expires, form the burgers and send them to the steamer for 15-20 minutes, if you use the slow cooker, then you can add rice to the lower container, thereby obtaining two dishes at once - a side dish and cutlets. Do not forget to set the “steaming” mode and also wait 15-20 minutes.
We must not forget that even with the steaming method, the cutlets cannot be overdone, as they may become too dense: the fish protein is compacted during long cooking. It should also be noted that the fish cakes are very well combined with sour cream or tomato sauce, which is very easy and quick to prepare, and your dish will give a special charm.
Butter Balls Recipe
You will need:
- hake fillets - 500 g;
- butter - 100 g;
- stale bread - 2 slices;
- onions - 1 pc .;
- eggs - 1 pc .;
- spices, greens.
Cooking minced meat - clean the bones from the bones, grind, add eggs, spices and soaked stale bread, mix everything. Cut the onion into small cubes, add it to the stuffing and mix everything thoroughly, slightly “beat off” the dough to make it dense.
